Ingredients

 

  • 500g pork mince (65% pork shoulder, 35% pork fat)
  • 5g pepper
  • 10g flat parsley
  • 10g shelled pistachios
  • 30g dried cranberries
  • 1 sheet puff pastry
  • Bacon to garnish
  • Egg and milk for wash
Method

 

  1. Mince the pork meat and fat together, put through the mincer twice.
  2. Mix the meat with salt, pepper, parsley, pistachio and cranberries.
  3. Wrap each portion of the meat mixture inside a pastry sheet form into a neat parcel.
  4. Tie the top with a piece of bacon.
