 Chinese XO sausages
Ingredients

 

  • 5kg pork trim
  • 400g plain rice flour
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon black pepper
  • 1 teaspoon paprika
  • 150g brown sugar
  • 1 bunch coriander, finely chopped
  • 250g water chestnuts, finely chopped
  • 1 brown onion, finely chopped
  • 300g oyster sauce
Method

 

  1. Combine all ingredients except oyster sauce.
  2. Run mixture through a coarse plate.
  3. Run mixture through a hamburger plate.
  4. Mix in oyster sauce.
  5. Fill into thin sausage casings.
