Pork, cheddar and mustard sausages
- 6kg pork shoulder
- 600g Irish pork sausage meal
- 300g American mustard
- 90g minced garlic
- 500ml water
- 50g fresh parsley, chopped
- 600g grated cheddar cheese
- Run pork shoulder through a coarse plate.
- Combine minced shoulder with sausage meal, run through a coarse plate.
- Mix in mustard, garlic and water and then run through a medium plate.
- Stir in parsley and cheese.
- Fill into sausage casings.
