Boerewors spiral sausage
Ingredients
- 5kg pork trim (85cl)
- 2.5kg beef chuck steak
- 3 tablespoons salt
- 2 tablespoons ground ginger
- 1 tablespoon ground cloves
- 2 tablespoons ground allspice
- 1 tablespoon ground black pepper
- 2 tablespoons ground nutmeg
- 450ml malt vinegar
Method
- Run the pork and beef through a coarse plate.
- Mix in all the remaining ingredients.
- Run through a coarse plate for a second time.
- Fill into a long sausage casing and shape into a coil.
- Please note: Maximum shelf life is 4 days.
