Cheese and mustard sausage roll swirls
- 800g pork mince
- ½ cup panko breadcrumbs
- ¼ onion, finely diced
- 2 tbsp wholegrain mustard
- 1 tsp fennel seeds
- 1 tsp salt
- ¼ tsp ground white pepper
- ¼ tsp ground white pepper
- 5 sheets puff pastry
- 5 tbsp Dijon mustard
- 2½ tbsp wholegrain mustard
- 350g sliced ham
- 250g grated cheese
- Egg wash or ghee
- White sesame seeds
- Extra thyme leaves to garnish
- For the sausage roll filling, mix all ingredients together. Divide into 5 portions approximately 180g per portion.
- To assemble, lay out pastry sheets. Place a portion of sausage roll mix shaped into a log on each pastry sheet at the edge closest to you.
- Mix Dijon and extra wholegrain mustards together, spread over pastry sheets leaving a 3cm border at the top.
- Lay ham slices over the mustard, sprinkle with grated cheese.
- Brush a little egg wash on top border and then firmly roll into a log shape.
- Brush surface with egg wash or melted ghee and sprinkle with sesame seeds.
- Garnish with extra thyme.
- Cut each roll into two portions.
