Cheese and mustard sausage roll swirls
Ingredients

 

  • 800g pork mince
  • ½ cup panko breadcrumbs
  • ¼ onion, finely diced
  • 2 tbsp wholegrain mustard
  • 1 tsp fennel seeds
  • 1 tsp salt
  • ¼ tsp ground white pepper
  • ¼ tsp ground white pepper
  • 5 sheets puff pastry
  • 5 tbsp Dijon mustard
  • 2½ tbsp wholegrain mustard
  • 350g sliced ham
  • 250g grated cheese
  • Egg wash or ghee
  • White sesame seeds
  • Extra thyme leaves to garnish
Method

 

  1. For the sausage roll filling, mix all ingredients together. Divide into 5 portions approximately 180g per portion.
  2. To assemble, lay out pastry sheets. Place a portion of sausage roll mix shaped into a log on each pastry sheet at the edge closest to you.
  3. Mix Dijon and extra wholegrain mustards together, spread over pastry sheets leaving a 3cm border at the top.
  4. Lay ham slices over the mustard, sprinkle with grated cheese.
  5. Brush a little egg wash on top border and then firmly roll into a log shape.
  6. Brush surface with egg wash or melted ghee and sprinkle with sesame seeds.
  7. Garnish with extra thyme.
  8. Cut each roll into two portions.
