Maple, bacon and apple pork sausages
- 8kg pork trim
- 2kg pork back fat
- 1kg pork sausage meal
- 250ml water
- 750g maple syrup
- 750g diced bacon, fried – optional
- 1 x 800g can pie apple, roughly chopped
- Mince pork and back fat through a 10mm plate into a tub.
- Add the sausage meal, water and maple syrup to the mince and mix well.
- Mince the sausage mix through 5mm plate back into the tub.
- Once minced add the fried bacon and apple to the sausage mince and mix well to evenly distribute through the mince.
- The mince is now ready to fill out in sausage skins of choice.
- Butchers Tip: This recipe could easily be made into thick or thin sausages, the thinner casings would create a product that is more kid friendly.
