Small pork roast
Ingredients

 

  • 1.2kg denuded pork rump
  • 50g spinach
  • 2 teaspoon basil pesto
  • 130g charred capsicum
  • 150g bocconcini
Method

 

  1. Cut three incisions into the rump, ¾ of the way through the meat.
  2. Spread a little pesto in each incision.
  3. Place capsicum, spinach and bocconcini in each incision.
  4. Secure with elastic truss bands.
