Pork popcorn
- 1kg pork neck
- 600ml butter milk
- ½ tsp (2.5g) salt
- ½ tsp (2.5g) garlic powder
- ½ tsp (2.5g) paprika
- 2/3 cup (170g) panko crumbs
- ½ cup (125g) southern style coater
- ¾ Cup (190g) plain flour
- 1 egg
- 1 litre milk
- Cut the pork neck into 2cm x 2cm dice.
- In a bowl whisk buttermilk, salt, garlic powder and paprika together.
- Marinate the diced pork in the buttermilk mixture for 4 hours.
- In a separate bowl mix panko crumbs with southern style coater.
- Take pork from the buttermilk mixture, coat pork pieces in flour prior to crumbing.
- Whisk egg and milk together.
- Dip floured pork pieces into the egg wash then coat with crumb mixture.
