Pork Involtini
Ingredients

 

  • 2 pork loin steaks, butterflied
  • 30g cream cheese
  • 1 teaspoon crushed garlic
  • 20g baby spinach, chopped
  • 7 strips sundried tomato
  • 40g feta cheese, crumbled
  • ½ teaspoon salt and pepper
  • 30g bacon, chopped
  • 1 rasher bacon cut in half
  • ½ teaspoon souvlaki seasoning
  • ½ teaspoon smoky BBQ seasoning
  • 1 tablespoon chopped parsley
Method

 

  1. Score the skin of the pork loin steaks.
  2. Add the cream cheese, garlic, spinach, tomato and feta to a bowl and mix to combine. Season to taste.
  3. Open the butterfly pork steak and place half the mixture in the middle of each steak.
  4. Fold in half, covering the mixture.
  5. Wrap the rashers of bacon around the steak.
  6. Truss to secure.
  7. Top with a strip of sundried tomato, sprinkle Souvlaki and smoky BBQ seasoning and parsley.
