Italian rolled pork loin
- 1 boneless pork loin, denuded
- 3 tablespoon basil pesto
- 2-3 slices provolone, Swiss or Jarlsberg cheese
- 3-5 slices salami
- 6 slices prosciutto, can use pancetta or streaky bacon if preferred
- Butterfly pork loin and spread pesto over the loin.
- Roll up loin and lay slices of cheese on top of pork roll. Then lay salami slices on top of the cheese.
- Wrap prosciutto around the outside of the loin.
- Tie roast to secure cheese, salami and prosciutto.
- Garnish with fresh basil leaves to place in display cabinet.
