Crackle crumbed pork fillet
Ingredients
- 200g pork fillet
- 30g garlic butter, room temperature
- 1 fig
- 1 teaspoon caramelised onion
- 100g pork crackle, premade
- 90g panko breadcrumbs
Method
- Using a sharp knife cut a pocket into the pork fillet.
- Mix the butter, diced fig and onion together. Place into a piping bag and fill the pocket in the pork fillet with the butter.
- Put in fridge to set.
- To prepare the crumb mix, blitz the crackle in a food processor to form small chips.
- In a bowl, mix the crackle chips with the breadcrumbs.
- Crumb the fillet with the crumb mix.
