Education masterclass at Agnes restaurant

On Sunday 14 July APL's PorkStar program hosted their first education masterclass at Agnes with the amazing owner and chef, Ben Williamson hosting 15 emerging chefs.
The masterclass aimed to educate and inspire the next generation of PorkStar chefs with APL's Kylie Roberts discussing the important role that the PorkStar program has within hospitality, and it's support in fostering food innovation through creative ways using Australian pork.
As part of the successful day, Ben spoke about life as a chef, his journey and the challenges he has faced in the industry and how he created the hugely successful, Anyday group.
The menu was innovative and used pork in a very different way, challenging the young chefs to make them think about pushing the boundaries with creativity and authenticity. The menu included pig’s brains burgers, pork tartare & a donut of liver parfait and brandied prunes.
PorkStar can’t wait to continue these sessions and emphasise the important role that hospitality and high-end food service has on the Australian pork industry.
