Pork maple mini roast
- Pork loin, denuded
- 600g pork, maple, bacon and apple sausage mince
- 12 slices (220g) prosciutto or a flat pancetta
- Maple syrup to garnish
- 1 Sliced apple to garnish
- Cut and butterfly 6 X 100g pork steak portions.
- Using a mallet, flatten the butterflied steaks as thin as possible without splitting the meat.
- Place sausage mince in the centre of the butterflied pork steak. Roll around to incase the mince.
- Once the roast is formed wrap the prosciutto or flat pancetta around the bottom sides of the mini roast.
- To finish glaze the roast with maple syrup and garnish with a slice of apple.
- Butchers Hint: To prevent the apple from going brown while on display, soak sliced apple in a lemon juice and water mixture prior to adding to the roast.
