Fine Foods is considered one of the leading events for the food industry and last week Australian Pork had a presence in various iterations across the show.
Continuing our long standing relationship with Nestle Professional, we had the great pleasure of showcasing Australian Pork to the finalists from the competition. Together with PorkStar we hosted a comprehensive educational morning with farmer Judy Croagh, where chef and charcuterie maker Mick Nunn broke down the forequarter and showcased the smallgoods that he makes from each cut.
His talk highlighted the importance of fresh Australian pork in his award-winning charcuterie and the importance of his relationship with Western Plains Pork where he sources his pigs from. In the spirit of education and future proofing pork on menu, we also worked with the Australian Culinary Federation to deliver an educational and informative pork demonstration in their kitchen and sponsored the National Apprentice Competition for the Final Year Apprentices.
The competitors created a 3-course meal in 180mins, were given a pork loin roast for their main meal and really showcased the breadth of their knowledge with an array of dishes.
